If vitamin c oxidizes easily, then why is it used as a preservative? I don't understand. Vitamin C (ascorbic acid) is sensitive to heat, air and water. It is volatile and raw foods are constantly losing vitamin C, because it reacts with the oxygen in the air. Why then, is it also used as a preservative? Wouldn't it just oxidize and leave the food unprotected?
What foods can I feed my baby that are rich in Vitamin C? My 6 month old baby dislikes cereal, so our pediatrician has encouraged us to feed him other foods which are high in iron. This is pretty easy to do. But she also told us to pair these iron-rich foods with Vitamin C-rich foods for better absorption of iron. The problem is, most of the Vitamin C foods are things babies under 1 year can't have (citrus fruits, strawberries, fruit juices, etc). What foods can I feed my baby that are safe, non-allergenic, and rich in Vitamin C? Thanks!
